Zucchini Boats

2 extra large zucchini
1 ½ cups shredded cheddar cheese
½ tsp salt
½ cup cottage cheese
2 beaten eggs
2 Tbsp chopped parsley.

Cook unpeeled whole zucchini in boiling water (or in microwave) until tender. Cool and split lengthwise. Scoop out center, leaving ¼ - ½ inch flesh. Combine scooped zucchini with cheeses, salt, and eggs. Fill shells. Bake in greased pan for about 35 minutes at 350, then for five additional minutes at 400.
