Corn Bread or Muffins

1 cup yellow corn meal
1 cup sifted flour
¼ cup sugar
3 tsp baking powder
1 tsp salt
¼ cup soft shortening
1 cup milk or soy milk
1 egg, beaten

Combine corn meal, flour, sugar, baking powder and salt in a bowl. Cut in shortening. Mix egg and milk together and add to dry ingredients.

For bread: bake in a greased 9x9x2 inch pan for 20-25 minutes.

For muffins: Using same batter, fill 12 greased muffin cups two-thirds full. Bake for about 20minutes.
