Czernowitzer CHALLAH

1 envelope (2 1/4 tsp) dry yeast
3/4 cup warm water
3 3/4 cup bread flour
2 large eggs (plus one for glazing)
1/2 cup vegetable oil
1 1/2 tsp salt
1/4 cup sugar
1 heaping tsp honey

  1. Mix together yeast and 3/4 cup flour.  Add warm water until smooth.  Let stand uncovered 15 minutes (puffs slightly).
     
  2. Mix in 2 eggs, oil, salt and sugar until all dissolved.  In large bowl, add flour. Work with hands until smooth ball.
     
  3. Place dough in warm, clean bowl.  Cover with plastic wrap.  Wait two hours or until dough ball has doubled in size.
     
  4. Divide the dough into two 1 lb. portions for loaves.   Braid or shape as desired.  Position on baking sheets.  Cover with plastic.
     
  5. Let rise until tripled in size, about 1 1/2 hours.
     
  6. Preheat oven to 350 degrees.  Brush with egg for glazing.
     
  7. Bake for 10-15 minutes, remove and egg the new places. 
     
  8. Bake for another 10-15 minutes or until golden brown and loaves sound hollow when tapped. Cool the loaves on a rack.
