2 acorn or butternut squash
2 medium apples, peeled and sliced
8 Tbsp. brown sugar
4 Tbsp. butter or margarine
Cinnamon
Microwave:
Leave squash whole and cook on high 8 to 10 minutes or until they feel soft
to the touch. Let stand 5 minutes. Cut in half and remove seeds.
Place cut-side up in shallow baking dish. Fill with apples, top each half
with 2 Tbsp. brown sugar, 1 Tbsp butter, and dash of cinnamon. Cook,
covered with wax paper, 4 to 5 minutes or until apples are tender. If
desired, add 1 Tbsp. raisins with apples to each squash half.
Conventional:
Cut squash in half and remove seeds. Place in shallow baking dish
cut-side down. Bake at 375º for 25-30 minutes. Fill with apples,
brown sugar, butter, and cinnamon. Cook 15-20 minutes or until the apples
and squash are tender.
