Zucchini Bread

Yield: 2 loaves

3 eggs
2 cups sugar
1 cup oil
1 Tbsp vanilla
2 cups loosely packed grated zucchini
1 tsp salt
2 tsp baking soda
1/4 tsp baking powder
2 cups sifted flour
1 tbsp cinnamon
1 cup chopped walnuts (optional)

Beat eggs until frothy. Beat in sugar, oil and vanilla. Stir in zucchini and sifted dry ingredients. Fold in nuts, if desired. Pour into 2 greased and floured 8 x 4.5 x 3 inch loaf pans. Bake at 350 for about one hour or until
cake tester comes out clean.
