VEGETABLE KUGEL

(TNT, KLP, Pareve)

10 oz package frozen chopped spinach
1 1/2 cup grated raw carrots
1 cup chopped onion
3/4 cup matzoh meal
1/2 cup chopped celery
1/2 tsp black pepper
1/2 tsp salt
3 eggs, well beaten
oil or margarine

Saute onion, celery, and carrots in oil or margarine until tender. Cook and drain spinach. Combine vegetables.
Add eggs, salt, pepper, and matzoh meal. Spoon into an 8 inch square pan. Bake about 45 minutes at 350. This recipe doubles very nicely.
