Pumpkin Pie

1 1/2 cup cooked or canned pumpkin
2 eggs, lightly beaten
2/3 cup light brown sugar
1 3/4 cups non-dairy creamer or soy milk
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger (optional)

Preheat oven to 425. Mix all ingredients together and pour into an unbaked 9-inch pie shell. Bake for 15 minutes. Reduce temperature to 350 and continue baking for about 45 minutes or until knife inserted into center of pie comes out clean.
