Pumpkin Muffins

½ cup regular flour
¼ cup whole wheat flour
½ cup sugar
¼ tsp cinnamon
½ tsp baking powder
½ tsp baking soda
1 egg
¼ cup oil
½ cup cooked or canned pumpkin

OPTIONAL: ¼ cup chopped walnuts
¼ cup chocolate chips
¼ cup raisins

Preheat oven to 350. Grease muffin pans. In a large bowl, combine egg and oil. In a medium bowl, combine flours, sugar, cinnamon, baking powder and baking soda. Add dry ingredients to wet ingredients. If using, stir in optional ingredients. Fill muffin pans 2/3 full. Bake for about 20-25 minutes.
