coffee cake

1 cup pareve margarine or Crisco
3 tsp baking powder
3 cups flour
1 cup apricot or orange juice
1 tsp salt
4 eggs
2 cups sugar
1/2 cup chopped walnuts
2 tsp cinnamon
1/2 cup chocolate chips* coated w/flour

*Note: Although many name brand chips such as Nestlé’s are dairy, many stores, such as Shop Rite, make their own that are pareve.

Cream together margarine, sugar and eggs. Sift together flour, salt and baking powder. Add to previous mixture alternating with juice. Pour half the batter into a 9x13 inch pan or a 10 inch tube pan. Sprinkle with nuts, cinnamon, sugar** and chocolate chips. Pour remaining batter into pan. Top w/remaining chips mixture. Bake for 1 hour - 1 hour and 15 minutes at 350.

** I sometimes use a prepared mixture of cinnamon and sugar. It's easier!
