Applesauce Muffins

½ cup unsalted butter or margarine, softened
½ cup sugar
2 eggs
1 cup unsweetened applesauce
1 ¾ cups sifted flour
3 tsp baking powder
½ tsp salt
½ cup chopped walnuts, optional

Preheat oven to 400. Grease bottoms of twelve muffin pan cups. Beat butter and sugar until light and fluffy. Beat in eggs, one at a time. Beat in applesauce. (Mixture may look separated). Sift together flour, baking powder and salt. Add to mixture. Add nuts. Stir briskly with fork until dry ingredients are moistened. Do not over mix. Batter will look lumpy. Fill each prepared cup two-thirds full with batter. Bake for about 20-25 minutes

Or until golden brown. Remove pan to wire rack. Loosen muffins and remove at once to prevent steaming.
