Dressing:
1/4 cup canola oil
2 Tbsp pancake syrup
2 Tbsp mayonnaise
2 Tbsp wine vinegar ( I used red)
1 tsp sugar
salt and pepper to taste
Whisk together syrup, mayonnaise, vinegar and sugar. Gradually shisk in oil
until mixture thickens slightly. Season with salt and pepper.
Salad:
1 1/2 (5 oz) bags mixed greens salad
1 apples cored and chopped
1/3 cup dried cranberries (or to taste)
1/2 cup chopped walnuts, toasted
Toss greens with apples, cranberries and walnuts. Toss with dressing to coat.
Hint: to toast the walnuts, place in dry nonstick skillet over medium heat for
3-5 minute, stirring occasionally. Cool before adding to salad.
